Guilt-Free Healthy Fries with Italian Ketchup

We were devising a recipe for Fish & Chips and decided to do a tasty and healthy alternative to the traditional French fries. It's fresh and full of potato flavor, rather than oil. Though it is not 'quick' by any means, it certainly is easy to do. 

 

French fries aren't complete unless you also have ketchup! We also made our own version of Ketchup, make with Italian ingredients and absolutely AMAZING and full of flavor. So addictive!

 

Ingredients:

 

Healthy Fries:

  • 2 Yellow Potatoes
  • 2 Yams/Sweet Potatoes
  • Extra-virgin Olive Oil 
  • Freshly Ground Black Pepper
  • Sea Salt

 

Homemade Italian Ketchup:

  • 18 Cherry Tomatoes
  • 1 Clove of Garlic
  • 1 Teaspoon of Raw Coconut Sugar
  • Extra-virgin Olive Oil 
  • Freshly Ground Black Pepper
  • Sea Salt
  • Fresh Basil

  

 

Instructions:

Healthy Fries:

  • Pre-heat the oven at 400°F.
  • Wash the potatoes and cut into rectangular sticks
  • Put them in a large bowl and season with extra-virgin olive oil, sea salt and pepper. Toss/Mix together.
  • Prepare a tray with baking paper and drizzle with a little bit of extra-virgin olive oil.
  • Add the fries to the tray and oven-bake for 30min with the fan setting on. 

 

Homemade Italian Ketchup:

  • Finely chop the garlic and dice the cherry tomatoes.
  • Add extra-virgin olive oil to a pan and stir fry the garlic and the cherry tomatoes. 
  • Season with sea salt and black pepper. 
  • Once the cherry tomatoes are half cooked add 1 teaspoon of coconut sugar and keep stirring at medium heat until they are completely cooked and mashed.
  • Add some freshly chopped basil at the end.
